Personally i go for flapjack with dried fruit in it, and the occasional savory item - hama nd cheese sandwich say. Drink i am on nuun and SIS Go.
Top tip though is 'stinger' gels. All natural made from honey - a lot of people who get bad stomachs with normal gels have no issues with these........

I'm a big fan of redbull. Drink one of those 4 hours into a ride, its a huge lift.

I am a bit of a nutrition whore, I use anything that they give out free at races.
I am doing IMUK this year and the nutrition is being supplied by powerbar, so I am using that in my training to get used to it.
If my next race used SiS then I would swap to that.

Powerbar EnergyDrink and Bar are great.
Ensure, salted Potatoes, Jetplanes and sour coke bottle-lollies on the bike, and gels from Enervit for the run.
And some eye-candy in front of you, that always helps!

For the bike it's powerbar caffinated gels pre-mixed with water in a bottle. One gel for ever 20 minutes - 1.
Then on the run I carry SiS Go gels as they don't need water and can be taken in between feed stations.
For training it's snickers, Fry's Turkish Delight (like a solid gel for 1/5th price).
Also like http://www.myprotien.co.uk for the "blend your own" sports drinks.
My current mix is 85% maltodextrin, 8% dextrose, 5% Fructose, 2% Electrolytes.
And their recovery drink is great too...all a lot less than branded products.

Plain Water! (Sports Drinks are highly overrated)
"Solid": No-taste-gels like the Swiss "Sponser Neutral"
and of course the good ol' Banana.
That's all you need to go Sub-9. (Don't know about Sub-8 though ;)

I like the High5 4:1 stuff, but it's a bastard to get out of your bottles and sticks like old dags to your downtube, so now I use the powerbar endurance mainly because that was the default drink in NZ and I got a load to use in the lead up. In fact it was worse than that, because the product we get here in the UK is different, so I had to get it sent over especially to train on. The gels are different too--I could eat the strawberry and banana gels all day, which is a bloody good job really. So i got stung with excess baggage charge on the way back, due to the weight of gels etc-bought from the very helpful Avanti Corner Shop in Taupo, not accumulated on the course-less weight=speed and all that . I still reckon it all needs extra sodium, so I add nuun as well.
Oh, and a sliced up banana loaf in my pockets for a bit of variety and easy chewing on the aerobars.
Bugger--now I've given Phil all my hot nutrition tips!

What's a Sis Go gel?? Sounds popular but might also be a Euro-thing. Will have to try it.
Drink: Carbo-Pro because it is absolutely loaded w/ med-chain carbs and has almost no flavor so no flavor-fatigue whatsoever http://www.nvo.com/sportquestdir/products/skudetail.nhtml?uid=1000 Also, Nuun, for flavor in carbo-pro or just to add to water in aero bottle, love that stuff!!!
Extra electrolytes w/ hammer's Endurolytes, at least 2-3 every hour religiously. 2 PB sandwiches on the bike for some solid food to cut down on the sloshing. Love the Enervitene packs (not the gels the more liquid ones) when I need instant energy.
For the run its all about flat coke and chicken broth! Caffeine, Sugar, Salt and Water!!

My 'biggest' fuel sources would have to be my arse and 'beer handles'. Despite drinking and eating continuously at IMNZ, I still lost nearly 5kg (11 pounds)! Also have to rate the big, fat, sloppy bacon and egg sandwich at bike special needs, the looks of envy I got...could have sold it to other competitors for a king's ransom.

I like Perpetuem by Hammer Nutrition on the bike (5 serves mixed in one bidon), and then hammer gels (3xhr) on the run, although by the 2hr point on the run im usually hoeing into anything they hand out including coke, jelly beans, fruit, cookies etc...

Food, love the Gu, Red Bull gives you wings, potatoes (hobbitses can't be wrong), natural snakes, snickers, fruit bread. Horleys Replace is great value and does the business.
Then my friend flat coke to bring it home on de run.

When training I like to mix it up the only ones I dont use if possible is pro4(taste) and High 5 which do some great flavours but my stomach does not like for some reason. fluids water and or gatorade both easily available, cheap and work. bars prefer sis go bars or torq bars great flavours but sadily not availble locally then clif bars and if on special power bars.
sis go gel are from sis products in england not sure if they are available in north america or outside europe but they are great and sponsor csc this year so maybe looking at expanding. If doing a race using products I had not used would get hold of some before hand to test.
